Honey Walnut Shrimp

  • 1 cup water
  • 2/3 cup white sugar
  • 1/2 cup walnuts
  • 1 pound shrimp
  • 1 cup mayonnaise
  • 3 1/2 ounces canned sweetened condensed milk
  • � cup sugar
  • 1� tsp. lemon juice
  • � tsp. vanilla

Stir together the water and sugar in a small saucepan. Bring to a boil and add the walnuts. Boil for 2 minutes, then drain and place walnuts on a cookie sheet to dry. In a medium serving bowl, stir together the mayonnaise, sweetened condensed milk, sugar, vanilla and lemon juice.

To cook the shrimp�Pan Fry: In skillet, heat � inch cooking oil to 350 degrees. Fry frozen shrimp for 3 minutes, turning frequently to ensure even browning. Drain on absorbent paper before serving. OR�Deep Fry: Place frozen shrimp separately into cooking oil. Fry frozen shrimp at 350 degrees for 3 minutes or until golden brown. Drain on absorbent paper before serving.

Warm up the sauce, add shrimp and toss to coat with the sauce. Warm the walnuts (if desired) and sprinkle on top and serve over white or brown rice.
