Ingredients:
8 ounces uncooked penne or rigatoni
2 tablespoons olive oil
1 each red, yellow and green bell pepper, thinly sliced
1 jar (26 ounces) marinara sauce
� cup grated Parmesan cheese
Directions:
Cook pasta according to package directions; drain.
Meanwhile, heat olive oil in large skillet over medium-high heat.
Add bell peppers; cook 2 minutes, stirring frequently.
Reduce heat to medium-low; stir in marinara sauce.
Cook and stir 5 minutes over medium heat, stirring frequently.
Pour sauce over hot pasta; sprinkle with cheese before serving.
Makes 6 to 8 servings
Variation: Add 1 cup coarsely chopped pepperoni with the pasta sauce.
