RED BEANS & RICE

>
> 2 pounds red beans, soaked overnight (in a pot and covered with water)
> 1 ham bone or ham hocks
> 1 pound cubed ham
> 1 pound cooked sausage (Mild or whatever you like)
> 1 onion
> 1/2 green pepper (optional)
> 2 cloves garlic, minced
> 2 Tablespoons minced parsley
> 2 bay leaves
> 1/2 tsp. crushed red pepper (to taste depending on your thermometer!)
> 1/8 tsp. cayenne pepper
> 1 tsp thyme
> 1 tsp. basil
> salt & petter to taste

> Cooked rice
>
> Drain beans. Put all ingredients into a large pot, add enough cold
> water to cover everything
> and bring to a boil. Lower heat and simmer uncovered for 3 to 4 hours
> or until beans are
> tender, adding water if the mixture is too thick, stirring every so
> often
>
> Ladle over cooked rice.
